Shamu Datshi
The ema datshi is the Bhutanese staple dish. This dish is a variation of the classic chili and cheese with chantrelle mushrooms. This is my hubby's favorite dish and I love to prepare this dish with plenty of cheese. I like to use Thai green peppers/ Indian hare mirchi as it becomes this balanced blend of heat and dairy. This dish is a wonderful accompaniment with Paa (meat sautéed with chilies and vegetables) and rice.

Serves 4-5 ppl
Ingredients
Salt - 1 tsp
Chantrelles mushroom - 1/2 lb - shred them into long thin pieces
Thai green chillies - 5-6 pcs (according to your spice level) - Julienne chillies
Swiss/american cheese slices - 4 slices
Farmer white cheese (preferably keep it out and let it mould a
bit. The stinkier the better) - few slices for flavor
olive oil - 1 tbsp
Garlic - 4 cloves diced
Water - 1/4 cup
Directions:
1. Add sliced mushrooms in a saucepan, sprinkle garlic and tomatoes and oil over it. Gently mix it up and cover with a lid and let it cook in mid-level heat.
2. In 5-8 minutes, add chillies, sprinkle salt over it, add the two cheeses and cover and let it cook for another 10 minutes. Serve with rice.
