Saag Tarkari
This is a simple vegetarian dish of mustard greens in onions and mustard oil. I love to serve this dish with Thai Jasmine rice and is a wonderful accompaniment with Kalo dal or Chili Chicken.

Serves 2-4 ppl
Ingredients
Salt - 1 tsp
Mustard Oil - 1.5 tbs
Mustard Greens/ Spinach - 1 bunch
Roasted Black Sesame Seeds - 2 lbs
Chile Arbol - 3 pcs
Onion - 1pc
Prep:
1. Chop the greens into bite sized pieces
2. Dice onions
Directions:
1. In a stainless steel pan or khadai add sesame oil in a mid-high flame, and when the oil is a bit heated add the onions and sesame seeds. Stir fry until onion is brown.
2. Then break apart the chile arbol and add it to the onion mix. Stir it for 2 minutes then add the greens and cover it with a lid.
3. After five minutes the greens will shrink, open the lid and increase heat to high flame and stir fry it until the water is evaporated. Serve with rice.
