Laphu Paa
This pork dish with white radish and green chillies takes me to my late aunt Om's kitchen. She was a very kind and giving person and this translated well in the care she brought to a dish with minimal ingredients. This is a nutritious dish to serve along white jasmine rice.

Serves 2-4 ppl
Ingredients
Pork belly(it's good if you can get with skin and some fat )- 1 pound
Salt - 1 tsp
Long Anaheim chilly peppers - 5
White Radish/ daikon - 1
Ginger - 1 tbsp
Red Chilli powder - 1 tbsp
Garlic - 4 cloves
Water - 1 cup
Oil - 2 tbsp
Directions
1. Cut pork into small cubes, in a pan, add chilli powder, 1/2 oil, minced garlic cloves and 1 cup of water. Cook in medium flame *helpful to pressure cook this part.
2. After 20 minutes check the meat and if the pork looks cooked, add radish sliced in thinly round cuts and julienne ginger. Let the pork saute it's flavor in the radish for 10 minutes.
3. Add Anaheim chillies and 1/2 tablespoon of oil, shake the pan and let the chillies saute with the radish and meat. Keep at medium flame for about 10 minute turn off when the ingredients are slightly fried. Now dish and serve with jasmine rice!
